This week’s coffee comes to us from the Sidama region of Ethiopia, a highly productive coffee region known for hiqh quality lots, due in large part to the comparably cool temperatures and copious rainfall. High elevations, cool temps, and steady rainfall lead to coffee cherries that mature more slowly. The resulting flavor is quite complex and concentrated. Like most washing stations in Ethiopia, Ayla Bombe collects harvests from hundreds of smallholder farmers, each typically farming around 2.5 hectares, approximately 6.2 acres.
This particular lot from Ayla Bombe impressed us with its wide spectrum of available flavor notes. The cup opens with a notable citrus presence and tartness like blood orange. That tartness grows as the cup cools and hints toward fresh cranberry. Along the way a slightly tannic note of concord grape appears, followed by a florality similar to orange blossom to finish the sip. Unlike some Ethiopian lots that hint toward black tea, this one finishes cleaner with only a hint of spice on the finish. We hope you enjoy this coffee as much as we have!
