This coffee comes for the Abana Estate, so it is single origin and single estate coffee from Ethiopia; which is fairly unusual as most coffees from Ethiopia are sold via an exchange. The estate borders the Anderacha which that boarders the estate. This river get very large during the rainy season and is a source of life and nutrients for the community and eco-system.This lot is uniquely processed in that it utilized a cherry rest period prior to processing. The cherry rest is done on raised drying beds that we customized for this purpose. The cherries were also stirred during the process to prevent scorching from the sun. The cherry breaks down just a bit and give off some incredible floral and tropical fruit juice fragrances.
We found notes of key lime, grapefruit, quince and chai in this cup.
