**NEW** GUATEMALA Las Palomas

This coffee is our third and final lot from the Zelaya family at Beneficio Bella Vista for the year. Like the Txol Witz, this lot was also sourced from the small farms in the San Pedro Necta municipality in Huehuetanango.

In contrast to the Txol Witz, this coffee is much sharper. It speaks to darker, more fall-adjacent flavors. Crisp red apple leads the way into darker, sweeter honey notes. The finish is earthy and tart reminiscent of fresh tobacco leaves. This coffee is also very responsive to grind adjustment (more so than we typically expect), which provides a lot of variability in your chosen brewing method. In testing, we pushed this coffee to opposite ends of the typical pourover spectrum (between 8 and 9 on a 16-point range, respectively) and found that our preference lies closer to the coarser end of that spectrum (8.8). Grinding finer will round off the edges for a sweeter cup, but will eliminate some of the notable tartness. We wouldn’t recommend grinding much coarser than we did at 8.8, as that led to some astringency similar to a strong black tea. No matter how you brew, we hope you enjoy!
